Course Name: Global Citizenship
Instructors: Dr. Jenny Murnane-Rainey and Brittany Scully
This course is an introduction to global citizenship, or the transcending of one’s own identity across geographic borders. Students will gain increased knowledge into cultural practices, geographic health strategies, business strategies, and how individual bias affects the creation of cross cultural and sector ties. Students will learn about global citizenship and have an opportunity to experience diversity, equity, and inclusion (DEI); workforce challenges; and public healthcare issues in a different culture.
+ Credits: 3 General Elective
+ Cost: $3,000 – All expenses (airfare, lodging, food, and group destinations) are included
+ October 15, 2023: $1,000 payment
+ January 15, 2024: $1,500 payment
+ March 15, 2024: $500 payment

Sicily, Italy – May 21-28, 2024

Course #1: Experiential Nutrition
Instructor: Nikki Kendall
Though Spain currently occupies the top spot on Bloomberg’s Global Health Index, Italy ranks a close second on the list of the world’s healthiest countries. Despite an abundance of pasta and pizza, the Italian diet is rich in fruit, vegetables, lean meat, legumes, fresh fish, and olive oil. These foods are a big part of the Mediterranean diet, considered to be one of the best for good cardiovascular and brain health. Extra virgin olive oil, in particular, lowers low-density lipoproteins (LDL) or “bad” cholesterol and may also reduce the risk of developing type 2 diabetes. In addition to diet, Italians also enjoy a healthy lifestyle in which outdoor activities like walking and hiking are commonplace. And it’s not just traditional exercise, Italians are very active as they go about their day — from riding bikes to work to walking to the grocery store. All-inclusive with meals and drinks, a private wine tour at a local vineyard, and two restaurant meals at local restaurants are included in the program.
Course #2: Business and Culture
Instructor: Nick Schreck
Italy is home to some incredible food and beverage options, but Italy is also one of the healthiest countries in the world. Their culture and their businesses are often built around food and beverage. This class aims to help students understand how business and culture in Sicily help shape each other. Students will experience cooking classes, vineyard tours, as well as many meetings with business owners to understand how the two areas (business and culture) intertwine.

+ Cost: $4,000 – All expenses (airfare, lodging, food, and group destinations) are included
+ October 15, 2023: $1,500 payment
+ January 15, 2024: $2,000 payment
+ March 15, 2024: $500 payment
